When we think of fall and winter, we think of all the goodness that comes with these seasons. We love that the leaves change color in these months, pumpkins are everywhere, family get-togethers are plentiful, and especially the food. The seasonal comfort food is probably our favorite part of these months. And the cooler weather certainly encourages us all to bake a little more, doesn't it?

Over the past few years we have discovered some apple recipes we really enjoy and definitely fill our need for comfort food without leaving us too stuffed. We love these stuffed apple cups because they're pretty basic, healthy, and make a great cleanse for your body after a big family meal. As well as a yummy dessert, these also make great décor for the dinner table. Consider these fun stuffed apple cups for your next holiday event!

Stuffed Apple Cups

5 large honey crisp apples
1 cup chopped apple
1 cup apple cider
1/2 cup rolled oats
1/2 cup autumn trail mix
1/2 cup pecans (halved)
2 tablespoons brown sugar
1 teaspoon cinnamon

Cut the tops off of the apples and scoop out the core, leaving about a 1/4-inch wall around the outside. Discard the cores of the apples.

Place apples in a baking dish or pie pan and fill with mixture. Drizzle a couple of tablespoons of apple cider on each apple and pour the rest in the bottom of the pan. (We went with a pure apple cider for the health aspect.) Garnish each apple with a pinch of brown sugar and a sprinkle of cinnamon.

Bake for 30-45 minutes at 350 degrees F. Once finished, remove from the oven and place in a serving dish. Garnish with a few more pinches of cinnamon and brown sugar.

Serve and enjoy!
