St. Patrick's Day Thin Mint Parfait

Here is the honest truth: Thin Mints are the secret to making any dessert better. Who doesn't love Thin Mints?


For Saint Patrick's Day this year I wanted to make a cute, green dessert and since I happened to have a freezer full of these delicious cookies, I figured I would combine the two and try a twist on a parfait recipe.

Thin Mint Parfaits


Thin Mints
Chocolate cake
Icing
Sprinkles
Mint chocolate chip gelato (you can use ice cream but the gelato makes it much richer)


Start with a bottom layer of chocolate cake. Then continue as follows: a Thin Mint cookie, a layer of gelato, followed by another layer of cake. Complete the yumminess with white icing. Sprinkle on themed sprinkles, I love these little shamrock ones. A third Thin Mint adorns the top of the parfait! This dessert is incredibly easy and took just a few minutes to make.


If you're short on time you can buy store-bought cupcakes, cut them in half, and reassemble them inside the mason jar with the cookies and gelato between the two halves. Then you look super fancy to your guests with a quarter of the time spent in the kitchen!

Tip!
Choose a serving bowl that allows you to see the yummy layers. I used mini jelly jars, but fancy parfait glasses or simple mason jars are also ideal.
