Spring arrived early in the Northeast this year! Now that the warm weather is here, healthy eating becomes so much easier for me. With all of the fresh fruits and vegetables in abundance and widely available at my local grocery store and farmer's market, I'm much more apt to utilize them in my meals and snacks. One place, in particular, is blended into nutritious, delicious smoothies.


With that said, here's a recipe for a thick and creamy Springtime smoothie that is packed with nutritious, seasonal produce and some seriously satisfying coconut milk (hello, healthy fats!), which will keep your hunger a bay for hours and hours. I hope you enjoy it as much as I did!


Springtime Smoothie


Recipe makes approximately 16 ounces


Ingredients:


1 ripe pear, chopped
1 cup fresh strawberries, sliced
3/4 cup canned coconut milk
1/4 cup shredded coconut
1/4 tsp cinnamon
2 tsp honey
4-5 ice cubes


Method: Combine ingredients in a blender and process until smooth. Pour into a glass and enjoy!
