Romantic Raspberry Champagne Cocktail

Toast to a love-filled year ahead with this elegant cocktail on Valentine's Day. We've paired an easy-to-make raspberry sauce with crisp bubbly for a cocktail you'll both love. Raspberries are both sweet and tart, complementing a brut champagne and a sweet, chocolatey dessert. Bonus: This beautiful red sauce makes this cocktail extra festive.
Raspberry Champagne Cocktail
Chilled brut champagne
Fresh raspberries for garnish
1 tablespoon raspberry coulis
For the raspberry coulis
1 1/2 cup raspberries*
1/2 cup white sugar
1/4 cup water
1 tablespoon fresh lemon juice
*Editors' Tip: You can use fresh or frozen berries. We used both. Frozen raspberries are picked at the peak of season with optimal sweetness. If you use fresh berries, you may need to adjust how much sugar you add depending on the sweetness—or tartness!
In a medium sauce pan, combine all ingredients for the raspberry coulis. Bring to a boil, stirring occasionally. Reduce heat, and continue stirring until sugar has dissolved.
Let cool completely, then transfer to a blender. Blend until smooth. Pour raspberry mixture through a fine sieve. Refrigerate in an air-tight container for up to one week.
For champagne cocktail, pour one tablespoon of raspberry coulis into each glass and top with champagne. Garnish with a fresh raspberry or two.
