Do you have a go-to fall recipe? One that people tell you again and again they want you to make? This recipe is the recipe I make all throughout the fall. I don't remember how I discovered it, but one day a couple of years ago I found it online. It's become a staple in our family. It's an interesting texture since it's more cake-like than other cookies but that just makes it melt in your mouth all the more.
Pumpkin Chocolate Chip Cookies
1 cup canned pumpkin
1 cup white sugar
1/2 cup vegetable oil
1 egg
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 tablespoon vanilla extract
2 cups semisweet chocolate chips
Combine pumpkin, sugar, vegetable oil, and egg.
In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.
Dissolve the baking soda with the milk and stir in.
Add flour mixture to pumpkin mixture and mix well. Add vanilla and chocolate chips.
Drop by the spoonful onto a greased cookie sheet and bake at 350 degrees F (175 degrees C) for about 10 minutes or until lightly brown and firm.
Please don't hate me if you find that you can't stop eating these cookies!
