On a cookie sheet or baking stone, lay out the thawed puff pastries. Slice the brie into strips and place evenly on the pastries, leaving 1 inch on either end of the pastries free. Slice the pears into strips and place on top of the brie. Sprinkle with brown sugar, cinnamon, and a pinch of salt. Fold free ends of pastries over the edges of the pears and pinch into place.
Bake for 10 to 15 minutes, pastries are done when they have started to brown. Remove from the oven and let cool. While they cool, crush up pistachios in a food processor or with a knife. Sprinkle pastries with pistachios, garnish, and enjoy!
