Oatmeal Scotchies Cookie Recipe
Cinnamon, vanilla, and butterscotch give this oatmeal cookie the right amount of seasonal sweetness.

Each year around the holidays, several of the women in my family plan an official bake day. On this day, we all meet at one person's house (usually whomever has the coolest kitchen gadgets) with our KitchenAid mixers in tow. We spend an entire day—I mean literally an entire whole full day from 6 a.m. until 6 p.m. baking treats, cookies, and all sorts of holiday goodies.
At the end of the baking, we wrap up our hard work into gift baskets filled with decadence to gift to coworkers, teachers, friends, and more. Many of my most treasured holiday memories happen in the kitchen during bake day, when many of my most favorite treats are whipped up in a cloud of flour and sugar. One of those happens to be oatmeal scotchies.

Oatmeal Scotchies
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup butter
1/2 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
3 cups quick cooking oats
1 package (11 ounces) butterscotch chips
Preheat the oven to 375 degrees F.
In a medium bowl, combine flour, baking soda, salt, and cinnamon. Set aside. In a large bowl, beat butter, white sugar, brown sugar, eggs, and vanilla together.
Add the flour mixture to the larger bowl a gradually. Stir in oats. Stir in butterscotch chips.
Spoon rounded tablespoon fulls ont a greased cookie sheet.
Bake for 7 minutes for chewy cookies every single time!
