Gingerbread Cookie Cups

'Tis the season for gingerbread! Nothing says 'It's the holidays' quite like gingerbread.
You'll love this take on the classic gingerbread recipe—cookie cups! They're easy to make and are the perfect bite-sized dessert. I serve these at all of my holiday parties amd it's easy to change up the flavor profile with different fillings. My favorite is to serve it filled with homemade caramel and topped with white chocolate mousse. It's an amazing and unexpected flavor combination that will wow your guests!

Gingerbread Cookie Cups with White Chocolate Mousse Filling
For Cookies:
- Cooking Spray
- 6 cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1/4 teaspoon ground black pepper
- 1 cup butter
- 1 cup molasses
- 1 cup brown sugar
- 2 eggs
- 2 teaspoons vanilla extract

For Filling:
- 1 pint whipping cream
- 12 ounces white chocolate
Follow the gingerbread cookies recipe to make the gingerbread batter. Or in a pinch, purchase pre-made gingerbread from the grocery store.
Spray your mini muffin pan with cooking spray. Even on non-stick cooking pans this helps.
Roll a 1-inch ball of gingerbread dough, drop it into a muffin tin cavity and press it down with your finger creating a dent in the middle. Bake your gingerbread according to the recipe.
While waiting for the cookies to bake, make the two-ingredient white chocolate mousse.
Remove tray from the oven and immediately use a small spoon to press down in the middle of the cookie dough. Press toward the outside edges creating a 'cup'. Allow the cookie cups to cool a bit, but they're best removed from the tin while still slightly warm. Once completely cooled, fill them with your favorite filling!
I love filling these gingerbread cups with homemade caramel. But in a pinch, store-bought dulce de leche works great. Top the filled cups with the two-ingredient white chocolate mousse you made while they were baking.
Drizzle some more homemade caramel on top of the mousse and finish with a sprinkle of confectioner's sugar.
