Falafel Waffle Recipe
Use your waffle maker to create this healthy and delicious lunch!
For a fun twist on a traditional Middle Eastern meal, make falafels in your waffle maker. Let it be a serve-yourself-affair and make it a buffet. Allow everyone to pile their falafel waffle high, pizza-style, with all of the fixings. Parents will love that this meal is loaded up with lots of veggies—cucumbers, tomatoes, olives, carrots, and of course, chickpeas.

Falafel Waffle Recipe
1/3 cup vegetable oil, plus more for brushing waffle iron
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon ground coriander
2 large egg whites
2 cloves garlic, halved
15-ounce can chickpeas, rinsed
Topping Options:
Lettuce
Olives
Carrots
Cucumbers
Tomatoes
Hummus
Tzatziki sauce
Combine oil, cilantro, flour, parsley, baking powder, cumin, salt, coriander, egg whites, garlic, and chickpeas in a food processor. Pulse ingredients until mixture is smooth.
Brush both sides of the waffle iron with oil. Fill waffle iron about three-quarters fill. Close lid and cook the falafel waffle until it's golden brown and firm in the center. This should take between 6 to 10 minutes.
To create a pizza-style falafel, use hummus as the red sauce, then add a variety of toppings. Top with tzatiki sauce and chopped parsley.
