Easy Lemon Bars Recipe

One of my very favorite desserts on the planet is homemade lemon bars, in fact I love all things lemon. The are the perfect dessert and super easy to make. This recipe is one of my favorite go-to's for a party or potluck. I make them in a large jelly roll pan for a crowd....and there are never any left over...they are that good!


Easy Homemade Lemon Bars


Crust:
2 sticks of butter
1/2 cup white sugar
2 cups flour


Filling:
6 eggs
2 1/2 cups white sugar (2 cups if you like tart)1 tablespoon fresh lemon zest
1 cup lemon juice
1 cup flour
Powdered sugar for dusting on top




Preheat your oven to 350 degrees F.

To make the crust, combine the butter and sugar in a mixer. Add the flour and mix until the crust is in small crumbles. Dump the crumbles into a 9x13-inch pan and press the crust into the pan with your hands. Bake for 15 minutes until the crust is ever-so-slightly browned on top. 


While the crust is baking, mix the filling. Beat together the eggs, sugar, lemon juice, lemon zest, and flour.


When the crust is done, pour the filling on top of the crust and put back into the oven for 30 minutes or until the filling no longer shakes when tapped. It should be lightly browned on top as well. Cool to room temperature and dust powdered sugar over the top.
