Delicious Lemon Curd Recipe

Spread this delicious dessert topping on everything from shortbread to scones.

If you love the taste of lemons, this dessert spread is perfect for you! Lemon curd is so versatile, it can be spread on cookies or scones. Buttery shortbread cookies and tart, but sweet lemon curd make a wonderful pairing in a light dessert. It's also a simple filling for pies, tarts, and cakes.


Lemon Curd


Zest of 1 lemon
3/4 cup fresh squeezed lemon juice
1 cup sugar
3 egg yolks
3 eggs
6 tablespoons butter
Dash of salt


Whisk the lemon juice, lemon zest, and sugar in a medium bowl. In a separate bowl whisk egg, and salt.


In a saucepan over low heat, melt butter into the lemon and sugar mixture. Once the butter is melted, pour half into the egg mixture and whisk constantly. Pour it back into the saucepan to mix with the remainder of the lemon and sugar mixture. (This will keep the eggs from scrambling.)

Let simmer for 5 to 8 minutes, slowly whisking and scraping the bottom of the saucepan. The mixture will thicken, but do not let it boil. Remove from heat, pour into glass container and let cool.


Store in an airtight container in the fridge for up to a week. Freeze the lemon curd to save it longer. Eat immediately or share with friends. Enjoy!
