Brown Butter Sage Sweet Potatoes
A spin on the traditional sweet potato casserole, this version is earthy and warm.

Instead of the sugary, marshmallow-topped version of Thanksgiving sweet potatoes we all know and love, I opted for a savory version this year. Browned butter and earthy sage give the sweet potatoes a warm, hearty flavor, which complements the rest of your Thanksgiving meal.
Brown Butter Sage Sweet Potatoes

Serves: 6
Ingredients:
2-3 sweet potatoes, peeled and cut into 3-inch pieces
4 tablespoons unsalted butter
6 sage leaves, roughly chopped
kosher salt
freshly ground black pepper
Directions:
Preheat the oven to 350 degrees F.
Place the sweet potatoes on a baking sheet or oven safe serving dish.
In a frying pan or saute pan, melt the butter and cook until it browns and gives off a nutty aroma. It should be bubbly and aromatic, be careful not to burn. Remove from heat and add the chopped sage. Pour the brown butter and sage over the sweet potatoes and toss.
Season generously with salt and pepper, then place in the oven to roast for about 30-45 minutes, turning the potatoes occasionally so that they browns on all sides. When the sweet potatoes are fork tender, remove from oven. Season to taste with salt and pepper, if necessary. Serve warm.
