Beef Tamale Pie with Cornbread Crust

What do weeknights look like for you? For me I'm usually in a hurry and looking for something to make for dinner that's quick, easy, and tasty. That's where this recipe comes in handy. It has everything in one casserole so there's minimal prep and not a lot of dishes to do (which really appeals to me!). You probably already have a lot of the ingredients on hand. It's basic, delicious and hearty.


Beef Tamale Pie with Cornbread Crust


1 pound ground beef
1 small onion, chopped
2 tablespoon dry taco seasoning
1 cup frozen corn, thawed
1 cup diced or canned fresh tomatoes
4 ounces of shredded cheese (cheddar or taco mix cheese)
2 boxes of cornbread (mix according to the directions on the box and set aside for later)


Preheat oven to 375 degrees F.


In a large skillet cook beef and onions until browned, stirring often. Stir in taco seasoning mix, cook for 30 seconds, stirring. ​Add thawed corn and tomatoes.

Transfer to a casserole dish. Top with 3/4 of the cheese saving some cheese for topping the cornbread crust. Top with prepared cornbread and remaining cheese. Bake for 30 minutes or until corn bread is baked through and is lightly browned around the edges. Top with sour cream, salsa, or guacamole, if desired.
