Apple Juice Muffin Recipe

These simple muffins are perfect for on-the-go fall mornings

These easy muffins use apple juice to add moisture and a seasonal flavor that is perfect for on-the-go fall mornings or just as a snack to power you through your day.


​As I type this, I'm scrambling to make it out the door to get the kids to school on time. We are running low on time for breakfast—between the baby needing to be changed, two squirmy boys to dress and comb hair, a dog that needs to go out, and a cat that's decided this particular morning is the perfect morning to antagonize said dog who then chases said cat who then leaves literal claw marks in my wall while trying to escape.


While I like to think of myself as a relatively prepared and put-together mom, some days I wave the white flag of surrender and propose a treaty. This treaty of mine involves allowing my four year old to wear the boots he's been repeatedly asking to wear in 100-degree weather, letting the baby have my almost empty bottle of water to immediately pour on the carpet, and apple muffins for all.


For white flag days like today, I try to keep muffins on hand. My apple juice muffins are a family favorite. They are an easy grab-and-go breakfast. The kids can eat them in the car, and they are a delicious alternative to cold cereal. They also make a great snack with coffee or tea when you have a glorious five minutes to yourself while baby naps or for while you hide in the pantry for just a moment of peace.


Personally, I like to warm mine up in the microwave for a few seconds and then slather on some butter. Because butter. My philosophy on butter is much like my soul sister Julia Child's, and I take any excuse to use it. Trust me on this, try the butter on these muffins.

These apple juice muffins are the perfect breakfast for a busy family. Nothing smells better than apple-y, cinnamon-y goodness wafting through your home as these bake in your oven. They smell like fall, and I imagine if fall had a taste it would be apple cinnamon. They're a great snack to grab for a family on-the-go.


​Apple Juice Muffins


2 cups flour
1/2 cup sugar
3 tablespoons baking powder
1/2 teaspoon salt
3/4 cup apple juice
1/3 cup vegetable oil
1 egg
1 teaspoon cinnamon
1 1/2 cups apples (peeled, cored, and finely diced)


Preheat your oven to 400 degrees F. Line muffin tin with cupcake liners or grease the bottoms of each cup.


In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, combine apple juice, oil, and egg.


Add the wet ingredients to the dry ingredients all at once and stir just until the dry ingredients are moist. Batter will be fairly lumpy. Stir in apples.


Fill cups roughly 3/4 full and bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
