Been using them a lot and sometimes as a deep fryer for 5months and the are fantastic. Cooks the food quick and no matter how burned or stuck you’re food may be, if you add some water while the pan is still hot after you’re done cooking it will all be soft and loose when you hand wash it. To prevent the food from sticking I let the pan heat first and then add your cook oil or butter and nothing will stick. I’ve been on a hurry some days and throw my food in quick and it sometimes stick(especially bacon) soaking it will make it easy to clean. I have a calphalone brand stainless steel pan and it works the same way but even if you soak that pan with hot water for hours it’s still hard to remove food stainsburns. It’s harder to clean. These Lagostina copper pans will change color and that’s completely normal that’s what copper’s suppose to do. I polish the copper with two different cleaners I tried and both cleaners are great you can’t go wrong with either. If you don’t like polishing your pans then it’s best to go with stainless steel. I bought this set because of how many pots come with it. I love that I get 3 sauce pots! They stack great, are lightweight, and look really nice. The lids are shallow so they can stack upright in a drawer and don't take up very much space. The bottom is smooth and coated which is a plus because the dishwasher doesn't dull the bottom of the pan, however I have noticed that it is doing it to the top rim of the pans. They are starting to get that dull rainbow look from the dishwasher. So these pans can go it the dishwasher but they will last longer if they are hand washed. The lids are vented on 2 sides. I wish they only vented on one side or the top because when you have 4 things going on the stove at once that's 8 spots where steam comes out! I was excited when we received the set. I have to admit it took some getting used to, cooking with these is a bit different than cooking with the nonstick pans we normally have. I would recommend seasoning the pans before using, it helps to avoid sticking.
