The time has come and the moment is right for your harvest! Harvesting your garden is one of life’s little moments that is worth the effort. The only thing left to do is figure out what to do with all your vegetables. Get creative with your meals and I promise everything tastes better when you grow it yourself!

Cream of Zucchini Soup

Ingredients:

  • 1/2 small onion, quartered
  • 2 cloves garlic
  • 3 small zucchini, skin on, cut in chunks
  • 32 oz. fat-free chicken stock
  • 2 T reduced fat sour cream
  • salt and pepper to taste
Method:
Combine all ingredients in a medium pot on medium heat. Boil.
Reduce to simmer and cover, about 20 minutes.
Puree, adding sour cream until smooth.
Serve hot. Sprinkle with parmesan cheese and garnish with parsley.
Serving Size: 1 cup; 65.3 calories; 1g fat; 3.5g protein; 11g carbohydrates; 2.8g fiber
