The 7-ply construction results in very even heat and the stainless steel is easy to clean . . . . even my older pieces still look new and they get used daily. This pan is a great size, has nice heft, and is just like everything else in the Viking Professional cookware line . . . fantastic. Its an investment, but worth every penny. Was this helpful?
