The Classic Collection The Shun Classic Collection from Kai /Kershaw follows a 700-year Japanese knife-making tradition. Famous for their edge retention and sharpening ease, each Shun Classic knife has an inner core of VG-10 "Super Steel" which makes for an exceptionally sharp and smooth blade. Each side of the VG-10 blade is clad with 16 layers of SUS400 stainless steel, forming a 33 layer blade that not only enhances the knife's beauty but adds durability, stain resistance and reduces friction when cutting.
