This thing is a beauty, by far the best looking weight I've owned. I chose this one over other weights because it's heavier than other weights being that it's 3 lb's. If you've never used a weight when cooking before I highly suggest it. Most restaurants use them, for a reason. Perfectly flat, evenly cooked bacon probably top of the list. It also increases cooking speed. When a piece of meat is in a hot pan, there is steam and space between the meat and the pan. Using a weight pushes it into the cooking surface, getting the steam out faster and giving you that nice crust on the meat. For grillering, an obvious con is the wooden handle. If you intend to get the weight hot before using (which I never bother), you'd want to wrap the handle in aluminum foil first. Worst case scenario, you burn up the handle. With the screws you could easily replace the handle, just look for wooden dowels at a hardware store. There is no reason why this shouldn't last you several life times. Although I haven't actually used this yet, if it does rust or you have a rust issue, you'd want to treat it like cast iron or carbon steel. Preheat your oven to 400, remove the handle. Take an oil and put it on a paper towel, wipe down the entirety of the weight. Doesn't need to be dripping, just enough to coat the surface. Put it in the oven for 30-45 minutes or until it turns goldenbronze. This will seal the surface and prevent any rust, and you can still wash it. Eventually the coating may wash off, just reapply and rebake, or after washing, towel dry and add a little bit of oil to it.
