I had heard lots of talk of French Ovens in recipes and online forums. Now that I own one, I can understand why. The initial investment has been worth it. I've cooked roasts and oxtail. There's plenty of room in this French Oven, and the heavy lid does a great job of locking in moisture. It's sturdy and I expect it will last me a long time. Made in France, and free of Polytetrafluoroethylene and other toxic chemicals was the primary reason I was seeking Cast Iron in the first place. I only removed one star for the two factors that accompany any cast iron brand : 1) Very Heavy - Make sure you have a good grip to avoid wrist sprains. 2) A bit hard to clean - Soak overnight followed by some good scrubbing.

Quality is excellent. The day it arrived I made paella for 4, on top of the stove and using the lid. Came out great. Last night I roasted a 5-lb chicken in it in the oven without the lid, flipping it every 30 min, side to front to side to back. Browned evenly, tasted good, and the depth of the pot kept it from spitting all over the oven. I can see that I will be using this frequently, so I'm keeping it on top of the stove. No sense putting it away.

I purchased the cast iron Round French Oven as a Christmas gift for my daughter and she just raves about it. She said the last time she used it there was baked on food all over the pot and she thought Oh this is going to take some scrubbing. She soaked it in water and to her amazement it came out like new, was a breeze to clean. I have wanted one of these for years, and I finally got the 5.5 qt. in Flame. I couldn't be happier. I have been using this every day since I got it to make stews and soups, and the 5.5 qt. is the perfect size to make about 6 servings. The Flame color is vibrant and I just leave the pot out on my stove top when I am not using it (partly because it is quite heavy, but mostly just because it looks so nice).
