I was thrilled when I was contacted by Wayfairs to do my first review and I knew exactly what I wanted to test, a knife sharpener. Originally, my thought was to choose a manual knife sharpener, but then I remembered the electric knife sharpener we used to use at the restaurant I worked at for many years. It has a three-stage process. The far left stage is only used for the first sharpening and only when the knife is extremely dull. Basically, this stage puts a new edge on the blade. The other two stages are used for regular sharpening and for smoothing the rough edges after Stage One. I liked this sharpener because it adjusts to the thickness of the knife being sharpened. It arrived just in time for our Mardi Gras celebration. Making Jambalaya entails a considerable amount of chopping. I have been using the Fury Knife Sharpening system, which is a manual process, I needed something that would sharpen, or at least, hone my serrated knives. I looked at every model offered, by as many different manufacturers as I could find. I read hundreds of reviews before finally choosing the Trizor XV EdgeSelect Electric Knife Sharpener by Chef's Choice ... I am glad I did and I'm very happy with the results (sharpness of knife edges, both straight and serrated). I do have two gripes. One, the Trizor XV is loud, but probably no louder than most electric knife sharpeners. After all, it is basically like running metal against a grinding wheel. Gripe #2 ... Okay, Chef's Choice ... Just how many knife sharpener models does there have to be? I would concede to three ... Best, Good, and Budget. I love this sharpener. I have tried most of the inexpensive sharpeners on the market and this one has just blown me away. Everything I own has a razor edge on it now. From my expensive Cutco straight edge bread knife to a paring knife I bought from Dollar Tree. I have only used it on straight edge knives . I have not tried it on serrated knives yet. I only own Cutco knives that have the double-d edge and they are only sharpened by the company. But it is worth the money just to be able to put an edge on my Rada parer eveytime I use it.
