  • In summer, I love to shop the local farmers market for the freshest, crispiest, and juiciest fruits and vegetables. Fruit and vegetables are much-loved in our household; we like to incorporate them into every meal. My son loves helping pick out our produce—especially strawberries. One Saturday, while my little man was choosing his fruit, I spotted a deal on a box of ripe, ready to use kiwis. Kiwis are so delicious and seem so exotic. I couldn't pass up taking home a box. Since they needed to be used within a day or two my husband and I spent the ride home brainstorming ways to use. (Of course, we just ate bowls and bowls of them raw, too.) That's when we struck gold with this kiwi salsa recipe!
     
    It's so simple yet so full of flavor! Chop, chop, chop, stir and you have an addicting salsa in minutes. Kiwis add a pop of vibrant color to this salsa and are a perfect replacement for tomatoes, since they're both sweet and acidic. The mangoes add a bold yellow color and sweetness, while the cucumber inserts a nice crunch. The bite from the jalapeño lends just enough heat. The lime juice rounds out the salsa with a little zing. Best of all this is a perfect recipe to make ahead of time because the longer it sits the more the flavors meld to together making it taste even more dynamite.

    Kiwi Salsa


    This salsa is perfect to eat with a bowl of chips or even on top of your favorite meat, seafood, or tacos. The possibilities are endless and so is the flavor!
     
    1 1/2 cups diced kiwi, skin removed
    1 mango, diced
    1/2 cup diced cucumber
    1/2 cup chopped cilantro
    2 tablespoons finely chopped jalapeño pepper, seeded and stemmed
    1 garlic clove, minced
    Juice of 1 lime
    Salt and pepper, to taste
     
    In a medium bowl, combine the kiwi, mango, cucumber, cilantro, jalapeño, garlic, and lime juice. Stir and season with salt and pepper to taste.
