I've only had the skillets about 2 weeks so I can't say anything about durability, but I have used the 10" every day so far and the results have been flawless. The pan heats slowly on my glass top stove because of the thick bottom but the heat is very even. I've made numerous omelets with this pan so far using no oil and there has been no sticking. Another plus is that the pan bottom is so evenly heated that the color of the omelet is evenly browned across the whole surface Clean up is a breeze, run a little water over the pan and it's clean even if it had residue from bacon in it. I have not used soap in it so far, just a little hot water and everything slides off. Just wipe dry and put away. Note: I do preheat the pan before putting the eggs into it. Adding eggs to the pan and then heating usually results in the eggs sticking no matter what kind of pan. I've had the large 6 quart Chef's pan from Circulon for about two months now and have used it heavily with great results also, including browning chicken in the pan adding veggies and spices and then covering the pan with its lid and baking in the oven. Once again, no sticking and very easy cleanup. Pans are supposed to be dishwasher safe but unless something changes over time I can see no reason for putting them in the dishwasher."..."  Read more

I bought this 9.5" pan just to see if I could cook eggs as well as my antique cast iron pans. Yes,it does scrambled eggs and omletts perfectly. Cooked breaded pork chops just right the other night with no sticking. Very important to season the pan exactly as instructed with the included directions.I would use only olive oil for seasoning. I use only olive or peanut oil for frying. Use low to med.heat for best results. Pans arn't as heavy as cast iron for weaker wrists. Very durable though. Cleanup with simple deglazing and rinse with hot water only. No soap needed and towel dry. Wonderful nonstick characteristics. Will last a lifetime. I intend to buy other sizes. Thrilled to find this set of 2 Calphalon Omelet pans. Nice big deep ones, with smooth slopping sides, for easilly slipping food onto a plate. Solid Handles, with no heat transfer, you can pick them up without burning your hand. We had been looking for several months for a couple of nice large 10" and 12" skillets. My husband always fries his potatoes in the largest, and his eggs in the smaller one. Every morning. for 22.5 years, we are on our 4th set of pans. Teflon coating doesn't last, the handles are coming loose. We began looking on line, especially pans that were made in America. Found them on your site. [...] followed good instructions for using them. They are wonderful. Our other skillets nice lids fit them just fine,they were on a great sale. Two of them for less than One would have cost separately. Thanks so much for providing this service. We don't live close enough to a large city no cookware store. I use these frying pans every day and they are wonderful. I bought a cheaper frying pan at a discount store and the non-stick finish flaked off within 4 months. These Emeril pans cook evenly and clean up beautifully with dish soap and a washcloth. I am only giving 4 stars because I can't put the pans in the dishwasher, but they are not ever dirty because they are non-stick. I love them and would not even let another borrow them because I am sure they would not be returned. :) All thumbs UP!"..."  Read more
