I bought this pressure cooker after taking an EdX course in molecular cooking. The benefits of faster cooking, moisture retention and ability to brown without drying things out all combine for exceptionally flavorful food. The pot itself is very heavy gauge with a well designed lid and seal system. The built in safety prevents opening the pot when under pressure. It has two pressure settings basically at one half and one full atmosphere (around 7.5 and 15 psi, respectively). At the higher pressure, water boils at about 250 degrees F. The size (8 quarts) is large but necessary if you are making soups or stocks. I think the size is ideal for a very broad range of cooking needs.

I've been cooking with my new pressure cooker (daily) for about a week now. This is the first one I have owned, and I am really loving what it can do. I think it's a nice size--not too big and not too small for our 3-person family. I would have given it 5 stars if the quick-release steam vented up instead of to the side. I am a vegan and am loving learning to cook beans quickly and just made tomato sauce today. I recommend Jill Nussinow's "The New Fast Food Pressure Cooking Cookbook" for anyone new to pressure cooking.
