Well, its about time! I have been wanting a cast Iron dutch oven for at least three years now but didn't know enough about them to know which was best for my purposes. Not only that, I couldn't justify spending close to $300.00's on a POT! Turns out I didn't have to. What a bargain and what fun it has been to use. It is exactly what I wanted. I was in need of a second 5 quart Dutch oven so I could bake artisan bread from Ken Forkish "Water, Flour, Salt, Yeast". The recipes requires preheating of the pan at 475 degrees for 45 minutes prior to baking. It was perfect. Even heating, sturdy lid handle, and no sticking. The resulting loaf was crispy and evenly browned. Highly recommended for bread baking; haven't tried it for anything else yet but I suspect it will work equally well for coq au vin or beef stew. A winner.
