Impressive and Solid 18/10 Cookware!

I will say some sets seem flimsy light and sadly not worth the money you spent. If you can't hold a heavier pan this may not be for you. I recently purchased a Delonghi Florence 18/10 set which I love. The base is a little less than 3/8" thick. They heat quicker and cool faster. The Earthchef Professional base is about a 1/2". The base is comprised of 6 layers. 1. CroMo Titanium steel 2. Aluminum 3.Memory Carbon steel? 4. aluminum 5. Copper disc and 6. Stainless capsule. If going by the diagram the copper layer is very very thin so I wonder if it will make any difference in heating and to be honest I purchased it for the copper cladding. The peeking copper circle does make me smile though. It does take longer to heat to temperature but holds the heat much longer. It does make it more difficult to raise/lower heat quickly but am very impressed by the set of 10 pieces. The box is dated 2010 fyi. The Saute pan is awesomely heavy! I haven't cooked in this piece yet- it has variations in texture that make it look gorgeous but I'm not sure how it will play out in actual cooking and cleaning. This set, as I have found out with the Delonghi, looks better in real life than in pictures. I grabbed this for a good price and am happy with the quality. The handles, sigh aren't the best feel, but as I've said elsewhere who loves All-Clad handles. Pros: Solid, heavy, 18/10 Stainless Steel Cons: Handles maybe.
