We need it to hold even temps in the 80c - 110c range for 30 - 60 minutes and it does this very well. Very simple analog control. Might well even be able to cook on it. Have to try that some time. This is a durable unit that is compact enough for use in a hostile environment. hellaredneck from somerset, PA	3.0 10/11/2010 not impressed My husband works on the gas pipeline so we move hotels alot and i refuse to eat out every night, so i ordered two of these to be able to cook in a convenient manner. With all that said, i wasn't too impressed, it takes forever for it to get hot, and gets cool as soon as you put the food in the pan, so forget about making anything crispy.
