Ive spent my entire life using cookie sheets that had non-stick coatings, and cookie sheets that had none. I have small hands, so grabbing a hot pan, even with a pot-holder, is risky. These pans are heavier than any Ive ever used, and the handles are easy to grasp, easy to hold onto, and keep me from burning my fingers (while wearing a pot-holder mitt). The lip around the sides makes it much more probable that anything that goes into the oven will come out on the pan, not in cinders removed from the bottom of the oven. I have uses this cookie sheet for cookies, rolls, biscuits, chicken tenders and cheese sticks. All of the items have cooked perfectly and none of them have stuck to the pan."
